It's a bit tricky to do the on-road mapping with a gearbox that won't shift up...
Regarding the starting, if the car has been left for a long period and the battery voltage drops below 11, the T6 ECU won't allow the car to start. I have the same issues with mine if it has been left unused for any long periods and it just needs to be kept on a trickle charger - no big deal (despite Wenny trying to make it into one).
Just check the voltage on the Pectel monitor or Stack. If it drops below 11, you'll need to jump start it.

Nordschleife, there's only two barriers to worry about - the ones on the left and the ones on the right.
