After treating the leather with a good cleaner you could try LV Protector (Colourlock product), it protects leather against UV and drying, and its paint against mechanical damage. Not glossy at all
Sonus Leather Conditioner is also worth a try, and gives nice, flat finish too.
Gliptone's G12 is also a good conditioner, flat finish, but it smells leather a little bit too much if you know what I mean.. and in my opinion leaves a thin layer of greasy film.
Try to search on Detailingworld forum for preview. It is possible that someone achieved good results on Escort leather before

i was at marks the other week & barlo was there washing his leather seats with simple soap & the seats came up spot on with that nice matt finish, cheep & cheerfull but it worked!
Definitive Wax's leather cleaner or Dr Leather or Swissvax do a Matt type cleaner, all above will add no gloss and remove the shiny greasy layer of the leather.
I was told not to worry to much about using leather creams/balms as its coated leather and as long as its looked after and kept in good nick the creams don't really do anything as they don't actually soak in to the coating on the leather.
