Which seam sealer

As per title, what is the best seam sealer for new body shell, and what else should I put on the seams and joints and under side before it is painted...

Does anybody know how the roof seam covers come off ( plastic strip on roof ) without breaking them as I want to clean under them and treat the rubber...
